Oh the joys of trying new, innovative ways to get your cravings in! I thoroughly enjoyed making, and eating this yummy version of french toast.   

There are a couple ways of achieving a tasty vegan french toast. This is the route I decided to go on…

  • 2-3 mashed bananas
  • 1 cup Dairy-free Milk
  • 2 tbsp. Maple Syrup
  • 2-3 tbsp Cinnamon
  • Brown Sugar
  • Sliced Apples
  • Nut of your choice ( I used Walnuts)
  • Coconut Oil ( for skillet)
  • Vegan friendly bread

In a large bowl- add your mashed bananas, Dairy-free Milk, maple syrup, cinnamon and wisk thoroughly. 

In another bowl lightly add your sliced apples and walnuts. Lightly use coconut oil on the apples and walnuts while mixing in the brown sugar and cinnamon ( the oil will help the brown sugar/cnm stick). 

Grease  2 skillets ( one for caramelization of apples and nuts and one for french toast) with Coconut oil and set both pans on medium heat. In one pan, add your sliced apples, nuts, brown sugar and top with cinnamon. 

While your apples and walnuts are caramelizing, bathe your vegan bread in the other bowl. Then lay on pan. wait 2-3 minutes before flipping on the other side. Toast to your liking! 

I also used my toaster oven and put on broil setting because I like my french toast rather crunchy. 

OPTION: Many people also like to add in applesauce to their bread mix for taste and for a thicker consistency.

Once plated- top off your french toast with the apples, walnuts, and cinnamon! ENJOY!
